Mixology class is dangerous

For Carl's birthday, I bought us two seats in an introductory mixology class at SF Mixology.  The class was so much fun that we decided to sign up for the 6 hour class with all the bells and whistles.  We were told the class concludes with a custom cocktail competition, so Carl and I have been experimenting with our own libations all weekend.  Here's the three I've come up with so far.  Let me know which one you think I should use in the comments.

Option 1: Raspberry Ginger Fizz
1 oz Ginger Vodka
1 oz plain vodka
1 oz fresh squeezed lemon juice
1 oz ginger ale
0.25 oz Chambord
Dash of raspberry essence
3-4 fresh raspberries
lemon twill

Shake the vodkas, lemon juice, chambord and essence over ice.  Strain into a collins glass with raspberries.  Muddle slightly.  Fill with ginger ale.  Garnish with lemon twill.

Option 2: SoCo Aphrodisiac
2 oz Southern Comfort
0.5 oz 1:1 simple syrup
3 dashes Angostura bitters
Splash of Absinthe

Stir the SoCo and simple syrup with ice until chilled.  Strain into a rocks glass and dash the bitters and Absinthe.  No garnish.

Option 3: Mexican Chocolate Cookie
1.33 oz Three Olives chocolate vodka
0.67 oz Goldshlager
0.5 oz Frangelico
Pinch of Mexican cocoa powder (cocoa, roasted red chili powder and cinnamon)
Fresh grated nutmeg

Stir all ingredients with ice until well chilled.  Strain into a chilled martini glass.
